Elizabeth and Seth Couto first met through ski patrol at Stowe Mountain Resort.

“I knew he was the one because it was just always so easy,” Liz said. “Dating wasn’t a challenge, it was just always fun to be hanging out with my friend.”

Seth, a solar installation technician and ski patroller, had an engagement ring made with the stone from his grandmother’s ring. He proposed to Liz, a registered nurse, on top of the mountain at the end of a ski day, and the couple got first tracks down a freshly groomed trail.

“He was so excited that he forgot that he brought up a bottle of Champagne, so we drank it in the parking lot, true après-ski style,” Liz said.

 The couple chose the Barn at Smugglers’ Notch for their May wedding. Liz said everything was easy and available on site, which took a lot of stress out of the planning process, “allowing us to really focus on what was important to us: having fun with our families and friends.”

Many of Liz’s friends also work in health care: Event planner Jen Fabian is a nurse; DJ Rekkon is an ICU nurse; officiant Mark Tapper is a nurse; and a friend from the hospital made their cake. 

“Nurses have many talents,” Liz said, “not to mention it was the safest wedding you could be at!”

The couple hosted a welcome event at the Mountain Grill at Smugglers’ Notch Resort, featuring bite-sized snacks that “people could come in and enjoy as they were arriving into town and getting settled,” Liz said. “The space allowed us to visit a little more with people and really get people into the Vermont get-away vibe that we wanted.”

Liz said deciding on the menu was a difficult decision for her — “as an Italian, I love food,” and if she wants a great meal she’ll cook it or take a trip to visit her dad — so Cast Iron Catering asked what the couple liked when they dined out. Pizza, wings, tacos, they said … so elevated comfort food/farm-to-table was their style, with rustic pizzas and slow-cooked wings, and a taco bar for dinner.

“It allowed us to account for anyone’s food restrictions, and ensured that no one left hungry.”

The couple focused on supporting local businesses, keeping the Vermont theme “even down to the maple frosted cupcakes,” Liz said.

The bridesmaids chose their own dresses, and sent swatches to Liz to ensure they would look great together.

The groom wore a simple gray suit with green and brown accents that “allowed him to stand out from his groomsmen, yet stand alone in a crowd,” Liz said. 

The groom’s party wore dark gray suits from the Michael Strahan Collection at JCPenney. Liz said she wanted to be conscious of budgets when choosing the groomsmen’s attire, and “felt that the option to purchase a suit for a very reasonable price that they could tailor and have to wear again was the best option.”

Also, the NY Giants fan said it was a no-brainer to choose suits from retired Giants player Strahan’s line, especially given her husband and friend’s team affiliation — “I got to giggle a little knowing they were all Patriots fans.”

 All in all, “our vision was simple and natural,” Liz said. “It was important that everything came together to look good, of course, but our big decisions were made based on what would be fun and enjoyed by everyone. We wanted our friends and families to appreciate why we love Vermont and have chosen to make it our home.”
